1 pound navy beans
1/2 pound bacon ends
1 medium onion, quartered
1/4 cup brown sugar
1/3 cup molasses
2 teaspoons dry mustard
2 teaspoons salt
1/4 teaspoon pepper
2 tablespoons vinegar
2 cups hot water

Long cooking develops the wonderful old-fashioned flavor. Soak beans overnight in 6 cups water; add 1/4 teaspoon baking soda if water is hard.

Fried Italian Ravioli

12 dozen fresh ravioli*
2 large eggs, beaten
Salt and cayenne pepper

* Fresh ravioli is usually available in the chilled section of your grocery.

In a large bowl beat together salt, pepper and eggs. Detach the raviolis one by one. Dip into the egg mixture, then deep fry for about 2 to 4 minutes ? until golden and crispy.

Serve hot with tomato salsa as appetizer.

Basque Barbecue Leg of Lamb

1 (6 to 7 pound) leg of lamb or 1 whole lamb

Marinade
3 tablespoons salt
1 teaspoon pepper
5 cloves garlic, pressed
1/2 cup vegetable oil
2 large lemons, juiced

2 red chile peppers
1 cup olive oil
Zest of 1 lemon
1 bay leaf

Combine chile peppers with olive oil, zest and bay leaf in a jar with a tight-fitting lid. Leave it in a warm spot for two or three weeks. The longer you keep the Piri Piri, the hotter it will get. A few drops will enhance almost all Caribbean dishes, especially fish dishes.
